Butternut Squash Soup

Nice hearty soup.

Ingredients

    Butternut squash, large. Peeled and diced to 1 inch cubes
  • 2
    Onions, large. Peeled and cut into quarters
  • 4
    Apples, not peeled, cored and cut into large quarters
  • 2-3 tsp
    EVOO
  • 1 Tbsp
    Salt & Pepper (1 Tbsp of each, roughly)
  • 2 litres
    Vegetable stock

Directions

  1. Toss squash, onions and apples together with olive oil on a large baking sheet.
  2. Add salt and pepper.
  3. Bake at 375 degrees until squash is soft (don't let anything burn). 35-45 minutes.
  4. Add stock to large pot and warm on med.
  5. Add all roasted ingredients to pot.
  6. Simmer/stir until all roasted ingredients are soft.
  7. Immersion blend until smooth.
  8. Additional salt and pepper to taste.
