Nice hearty soup.

Ingredients

Butternut squash, large. Peeled and diced to 1 inch cubes
2
Onions, large. Peeled and cut into quarters

Apples, not peeled, cored and cut into large quarters
2-3 tsp
EVOO
1 Tbsp
Salt & Pepper (1 Tbsp of each, roughly)
2 litres
Vegetable stock

Directions
Toss squash, onions and apples together with olive oil on a large baking sheet.
Add salt and pepper.
Bake at 375 degrees until squash is soft (don't let anything burn). 35-45 minutes.
Add stock to large pot and warm on med.
Add all roasted ingredients to pot.
Simmer/stir until all roasted ingredients are soft.
Immersion blend until smooth.
Additional salt and pepper to taste.
