Doug's Curried Lentils

Pretty basic lentils with curry. Haven't made this in a while, seems pretty simple.

Ingredients

  • 2 Tbsp
    EVOO
  • 2
    Onions, medium, diced
  • 3 Tbsp
    Garlic, minced
  • 6 Tbsp
    Curry powder
  • 1 ½ cups
    Green lentils
  • 2 cans
    Tomatoes, diced (2x 796ml cans)
  • 3 Tbsp
    Tomato paste
  • Salt & Pepper

Directions

  1. In a large saucepan, heat EVOO until warmed, on med-low heat.
  2. Add onions, garlic. Cook until caramelized.
  3. Add curry powder, toast for about a minute.
  4. Add tomato paste.
  5. Add green lentils.
  6. Continue cooking to braise the mixture (3-5 minutes).
  7. Add diced tomatoes. Rinse the cans with water and add water to the pan (total another 1/2 cup of water maybe?).
  8. Add salt and pepper to taste.
  9. Reduce heat and simmer for 30-60 minutes.
  10. Serve with cooked rice, or on its own.
