Crispy Baked Chicken Thighs

Easy, very crispy chicken thighs. They are at their very best fresh out of the oven. They reheat okay in the microwave, but you always lose that initial super-crisp skin.

Ingredients

  • 3+ Tbsp
    Chicken Spice Mix (see recipe)
  • 10
    Chicken thighs, skin on, bone in
  • 2 Tbsp
    EVOO

Directions

  1. Preheat oven to 400 F.
  2. Line a large baking sheet with foil or parchment paper for easy cleanup.
  3. Remove chicken thighs from packaging and pat them dry with paper towels.
  4. Arrange the chicken thighs on prepared baking sheet and drizzle with the EVOO. Brush or rub the EVOO into the chicken to coat.
  5. Sprinkle the Chicken Spice Mix over the chicken.
  6. Bake the chicken for 45 minutes.

Chef's Thoughts

I usually pick up the skin on, bone in chicken thighs at Costco for this recipe - makes about three baking sheets worth!
