Lentil Taco Salad

This became a staple in our supper rotation for years! Still make it on occasion.

Ingredients

  • 1
    Onion, medium, diced
  • 1 Tbsp
    Garlic, minced
  • 1 ½ cups
    Green lentils
  • 2 cans
    Tomatoes, diced, with liquid (large cans)
  • Taco seasoning (to taste)
  • Nacho chips
  • Toppings (lettuce, tomato, onion, cheese, sour cream - whatever you like on your taco!)

Directions

  1. Soak the lentils in cold water for about 30 minutes and rinse. (If I don't have time, I just rinse them and go).
  2. In a large pan or dutch ove, warm the EVOO on med-low.
  3. Add the diced onions and garlic. Cook until onions are caramelized.
  4. Add lentils and mix well.
  5. Add the 2 cans of tomatoes and mix well.
  6. Add taco seasoning and mix well.
  7. Simmer for 40+ minutes, mixing often - enough to reduce and thicken to a stiff paste-like texture.
  8. Spoon into a bowl and add your toppings. Mix it, scoop it, crush your chips in, eat it with a spoon - however you want to eat it!
