Marry Me Orzo

Looks good on paper, let's give it a go.

Ingredients

  • 1 ½ cups
    Orzo, dry
  • 14 oz
    Chickpeas, drained and rinsed
  • 1
    Red onion, diced
  • ½ cup
    Sun dried tomatoes, chopped
  • 4
    Garlic cloves, minced
  • 1 tsp
    Paprika
  • 3 cups
    Vegetable broth
  • 1 cup
    Coconut milk
  • 2-3 cups
    Spinach
  • 4
    Sausages, cooked and sliced
  • Salt & Pepper to taste
  • 1
    Lemon, juiced, as desired

Directions

  1. Preheat oven to 375 F.
  2. In a casserole dish or dutch oven, add all ingredients except lemon juice and sausages. Mix well.
  3. Cover tightly with foil or lid, bake for 30 minutes.
  4. Remove foil, add sausages and stir well. Bake uncovered for 15-20 minutes, until orzo is tender and creamy.
  5. Finish with lemon juice as desired and serve.

Chef's Thoughts

March 2026 - End result was good - really nice texture, but it was lacking flavour overall, although a healthy squeeze of lemon juice helped a lot. More sun-dried tomatoes maybe? On a reheat the next day, I added a Johnsonville Italian Sausage, cut up, and it really boosted the overall flavour. I'd probably add some kind of savory meat to the final recipe here. Not in a rush to try again, but it was nice for a change, the orzo.
