Pork Loin Roast with Rub

Simple pork loin roast with a basic dry rub seasoning.

Ingredients

  • Dry Rub
  • 1 ½ tsp
    Kosher salt
  • 1 tsp
    Black pepper
  • 1 tsp
    Paprika
  • 1 tsp
    Garlic powder
  • ½ tsp
    Oregano
  • ½ tsp
    Basil
  • ½ tsp
    Thyme
  • Lemon zest from 1/2 a lemon
  • 1 tsp
    EVOO
  • The Rest
  • 1
    Pork loin, boneless
  • 1
    Onion, peeled and sliced thick

Directions

  1. Mix all dry rub ingredients together.
  2. Pat the pork loin dry with paper towel.
  3. Rub EVOO onto the pork loin.
  4. Apply the dry rub to all sides of the pork loin.
  5. On a roasting pan, place thick sliced onions as a bed for the pork loin.
  6. Place the pork loin on the onions.
  7. Roast at 375 F until internal temp reads 140-145 F.
  8. Rest for 10 minutes, serve.
  9. Optional - Finish on broil for a deeper crust.

Chef's Thoughts

Nope. Too herbaceous and all over the place. Oregano I think was out of place. Paprika didn't help I don't think. Back to basics next time.
