Ingredients

  • Dry Rub
  • 2 Tbsp
    Brown sugar
  • 1 Tbsp
    Paprika
  • 1 tsp
    Garlic powder
  • 1 tsp
    Onion powder
  • 1 tsp
    Salt
  • ½ tsp
    Black pepper
  • The Rest
  • 2-3 Tbsp
    Apple cider vinegar
  • BBQ Sauce
  • 2-3 lbs
    Ribs
  • 1-2
    Onions, sliced thick

Directions

  1. Mix dry rub ingredients together
  2. Remove membrane from back of ribs if still attached. Pat dry.
  3. Coat ribs on all sides with dry rub.
  4. Place onions on bottom of slow cooker as a bed to elevate the ribs out of the liquid.
  5. Add apple cider vinegar to slow cooker.
  6. Add ribs to slow cooker (fill it up, use what you have).
  7. Cook on LOW 7-8 hours, or HIGH 4-5 hours. Tender, but not falling apart.
  8. Preheat oven to 450 F.
  9. Transfer ribs to foil-lined sheet pan, brush generously with BBQ sauce.
  10. Finish in the oven until sauce thickens and bubbles (5-10 minutes).
  11. Let rest for a few minutes, slice and serve.

Chef's Thoughts

Slow cooker on low for 7.5 hours - maybe take them out a bit sooner (30-60 minutes) - they got pretty tender by the end. Didn't love this dry rub, go for something more generic perhaps. Simply Bullseye BBQ sauce was fine, they crisped up nicely in a hot oven. At better as leftovers I think. Will definitely try again. Was able to fit a full pack of Costco Ribs into the slow cooker, make a ton of ribs - would feed maybe 8 people with no leftovers.
