Garlic Mashed Potatoes

Ingredients

  • 8-10
    Russet potatoes, peeled and chopped to 1-2 inch chunks
  • ¾ cup
    Butter
  • 1 cup
    Milk or cream
  • 2-3 tsp
    Garlic powder
  • 2 Tbsp
    Chives, chopped
  • Salt & Pepper
  • ½ cup
    Sour cream (optional)

Directions

  1. Boil potatoes until soft enough to mash.
  2. Drain potatoes, set aside, keep warm.
  3. In the (now empty) pot the potatoes were boiled in, add milk, butter, garlic powder, chives, salt & pepper to taste.
  4. Simmer on low until infused (5-7 minutes).
  5. Add potatoes, mash until smooth.

Chef's Thoughts

Very nice result. Could have gone more garlic powder (or mine is just old). Adding the cooked potatoes to the warm infused liquid - mashing was a breeze. Barely had to mash at all and it was smoother than I normally get.

Although, I did cut the potatoes down to quarter size instead of the usual full-potato. Cooked a lot faster, but I think made the mash easier, too. Definitely will just keep doing that going forward.

Did not add sour cream, but would consider it for sure at the mash stage.

It was a LOT of butter. Man, a lot.
