Chickpea Lunch

My go-to lunch. Makes 4 servings, easy and filling. They say rice and beans are a complete protein!

Ingredients

  • 540 ml
    Chickpeas (1 can, rinsed and drained)
  • 540 ml
    Black beans (1 can, rinsed and drained)
  • 341 ml
    Corn niblets (1 can, leave it undrained)
  • 1
    Large onion, diced
  • 1
    Sweet potato, peeled and diced to 1/4 inch cubes
  • 1 cup
    Brown rice (dry)
  • 1 Tbsp
    EVOO
  • Salt & Pepper

Directions

  1. Cook Brown rice per package directions.
  2. Heat up the EVOO in a large pan - medium-low heat.
  3. Add diced onions, saute until translucent.
  4. Add diced Sweet Potato. Mix in and continue cooking for 5-8 minutes (until Sweet Potato becomes soft)
  5. Add Chickpeas. Add Salt & Pepper to taste. Mix in and continue cooking 2-3 minutes.
  6. Add Black Beans and Corn Niblets. Mix in and continue cooking until well mixed and heated through.
  7. Serve over the cooked brown rice, for a complete protein.
  8. Can then add KFI sauce, or the Middle Eastern spice mix. Heinz 57 is pretty good as well.

Love this, easy go to lunch. Add some minced or chopped garlic for another little flavour bump.
